It was in l789, that a gentleman from the Auvergne region, the Marquis de Lessert, while strolling in Evian, quenched his thirst with the water from Saint Catherine's fountain, which sprang from below the enclosure of a property belonging to a certain Monsieur Cachat. Finding this water "light and easy to drink", the Marquis, who suffered from kidney and liver ailments, drank it regularly and noticed an improvement in his health. He extolled the virtues of the water, and doctors began to prescribe its consumption. Monsieur Cachat fenced off his spring and started marketing the water. And so the Cachat spring and Evian Natural Mineral Water were born.
With the granting of franchises and the building of a castle as early as the 13th century, Evian was, as far back as the Middle Ages, a prosperous economic centre, a commercial port on the lake and a favourite retreat for the princes of Savoy. In the second half of the l8th century, water began to impact even more directly on the city's fortunes, with the discovery of Evian natural mineral water in 1790. 1826 saw the founding of the first mineral water operating company and the thermal spa. The inexorable expansion of this "water town" was further confirmed with the opening of the Theatre (1883/85), the "Brunarius" thermal spa (1900-1902), the "Cachat" pump room in 1903, the Hôtel Royal (1906-1908), the funicular railway (1907-1913), and the Casino (1911-1912).
